It’s Finally Fall!

When the weather starts to turn along with the trees, you know Fall is officially here! Although I sometimes miss the chilly, colorful fall season I grew up with in Wisconsin, this is still my favorite time of year–you can’t beat wrapping up in a cozy sweater, grabbing a warm beverage, and just taking in the beautiful changing colors. This week, I’m going to combine two of my favorite things–fall and breakfast–and share my favorite recipe for pumpkin pancakes.
I attended dental school at Midwestern University in Arizona, and during our third and fourth year of the program we were organized into dental “suites” that each operated like their own dental practice with a supervising faculty dentist. Every Friday morning our suite ate breakfast together. This was a time to reflect on the week and talk about our highs and lows. I learned an incredible amount from all of my suite faculty, but this recipe was definitely the tastiest lesson.

PUMPKIN PANCAKES:
2 cups all-purpose flour
2 Tbsp. packed brown sugar
1 Tbsp. salt
1-3/4 cups milk
3 eggs, lightly beaten
3/4 canned pumpkin
1/4 cup cooking oil
1/2 tsp. pumpkin spice
